Ingredients:

  • Barley, Oats, and Milk – according to your need
  • Honey or Raisins – optional, according to your need

This is made by boiling the milk, adding the quantity of barley or oats you want to consume, and mixing them well after they are soaked well in milk. Then add the needed flavor or other things like honey or raisins or anything other than things that may increase your sugar level. Consume it when either hot or when cooled down a bit. 

Cheddar Cheese and Broccoli Soup

Ingredients:

  • Broccoli – 1 pound 
  • Olive oil – 1 tablespoon 
  • Chopped onion – 1
  • chopped celery stalk – 1
  • All-purpose Flour – 2 tablespoon
  • Sodium-reduced- chicken broth – 14 ½ ounces
  • Evaporated fat-free milk – 1 ½ ounce
  • Shredded, fat-reduced Cheddar Cheese – 1 ¼ cups  
  • Freshly grounded black pepper – ½  teaspoon 
  • Nutmeg – ¼ teaspoon 
  • Salt – according to your taste

First, we have to trim and peel the broccoli stem and cut off the 15 florets of it. Slightly chop the remaining broccoli, and then put the broccoli and its florets in boiling water until it becomes green, Then after waiting for 2 minutes, drain off the water and keep them aside. Now, in a pan, heat the olive oil on medium heat and saute the onions and celery until soft. Wait for 5 minutes. Take the flour and whisk it and then cook it for around 1 minute. 

Then add the broth and the milk, stir constantly while cooking until the mixture becomes thick which will take around 5 minutes. Later add the chopped broccoli, cheese, pepper, nutmeg, and salt. Keep stirring until the cheese is fully melted and when the soup is well heated. It will take about 3 minutes, then garnish each bowl with reserved broccoli florets. 

Diabetic Chicken Noodles Soup

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 6 cups of water
  • 1 can of fat-free, ⅓ -less-sodium chicken broth
  • ⅓ cup finely diced carrots
  • 1 cup diced onions, that is ½ onion large
  • ½ cup diced celery
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • Poultry seasoning – ½ teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ⅛ teaspoon
  • 4 ounces of dry angel hair pasta, where noodles are broken into halves

Place the chicken, broth, carrots, water, onions, and celery in a pot and boil them together. Cook the chicken for 15 minutes until it becomes faded pink. Remove the chicken and skim the fat from the broth. Put the broth into the refrigerator for 2 to 3 hours, and after that skim the fat out of it. Break the chicken into small pieces and mix it with the skimmed broth and other remaining ingredients, then place this over high heat until it comes to a boil. 

Later reduce the flame to medium and let it boil slowly. Cook this for 3 to 5 minutes and serve it hot right away as the pasta will keep absorbing liquid if the soup is not consumed hot. This soup just takes 45 minutes to prepare and is healthy and helps control the sugar level.
